TAPAS
One of the world’s most beloved food
treats, tapas rank with mezza and dim sum as delicious tastes that can be
enjoyed for their own sake or as a appetizing starter to a larger meal.
However, tapas represent a style of eating
and a way of life that’s entirely Spanish.
They are always served quickly in small
portions and are intended to be shared.
The Spanish verb ‘tapar’
means ‘to cover’,
and originally a tapa was a slice of cured ham or chorizo served atop a glass of
wine to encourage thirst, and thereby wine sales.
Today these highly flavorful little portions come in hundreds of varieties and
vary by region and season.
